Indian Sweets: Jalebi Recipe

Jalebi is a favorite Indian sweet made with flour and sugar syrup. It is mostly served at festivals and special occasions. This crispy syrupy Indian sweet tastes best when served with chilled yogurt or rabri. Here is the simple recipe of making delicious jalebi.

Ingredients:

3 cup all-purpose flour

2 cup thickened yogurt

1/2 cup ghee

3 cup sugar

5 strand saffron

1/2 teaspoon powdered green cardamom

1/2 cup corn flour

1 and 1/2 pinch baking soda

2 cup sunflower oil

3 cup water

4 drops rose essence

1/2 teaspoon edible food color (optional)

Method-

Step 1

First, mix maida, corn flour and baking soda in a bowl. Add ghee, orange food color (if you want), curd and water to make a thick batter but having a pouring consistency. Keep it aside for overnight. 8-10 hours.

Now, for heat a pan over medium flame and boil water in it. Add sugar and mix until fully dissolved. Simmer the syrup until it attains one string consistency. Then add saffron, cardamom powder, and rose essence. Stir well.

Step 2

For frying the jalebis, heat oil in a pan over medium heat. Now fill the jalebi batter in a muslin cloth and pierce a small hole in the cloth. Squeeze the muslin cloth to make concentric circles. Fry till jalebis are crisp and golden.

Step 3

Soak the jalebis in sugar syrup for 2-3 minutes, make sure that the sugar syrup is warm and not very hot. Then remove it and place the jalebis on a plate.

Finally, the Indian sweets jalebis are ready to be served with creamy Rabri.
